Berry Patriotic Yogurt Cups

This dashing red, white and blue dessert is a fresher, lighter take on the traditional trifle or tartlet.

Prepare it ahead of time in individual dessert cups, one-cup plastic containers or even a large clear bowl so you can see the colorful layers. Keep it cool until served. If you're traveling, layer the dessert into a Ziploc® Brand Container with the Smart Snap™ Seal (7-cup bowl) and then place it in your cooler surrounded with Ziploc® Brand Storage Bags filled with ice. If desired, substitute pitted halved cherries or sliced strawberries for the raspberries in this recipe.

Ingredients

  • 1 cup graham cracker crumbs (10 graham crackers, broken into pieces and finely crushed)
  • 1 1/2 Tablespoons sugar
  • 4 Tablespoons butter, melted
  • 1 1/2 cups blueberries, rinsed and drained
  • 1 1/2 cups vanilla yogurt (or pudding)
  • 1 1/2 cups raspberries, rinsed and drained

Optional
  • Fresh mint sprigs for garnish
  • 1 1/2 cups cherries, pitted and halved, or 1 1/2 cups strawberries, sliced
 

Directions

step 1Pulse graham cracker pieces in food processor until ground into fine crumbs.
step 2In a medium bowl mix graham cracker crumbs and sugar. Add melted butter and work into crumbs with a fork or fingers until well incorporated. Firmly press crumb mixture using hands or a flat-bottom drinking glass evenly into the bottom of cups or serving bowl or container.
step 3Add blueberries in an even layer on top of crumb crust.
step 4Add yogurt or pudding in an even layer on top of blueberries.
step 5Add raspberries in an even layer on top of yogurt. Cover with plastic wrap and chill until ready to serve. Garnish with mint sprigs if desired.

My brother layers strawberries, kiwi, blue,black and raspberries with plain yogurt mixed with a little honey. Even lower in cals. than this one and both are delicious.
