Use our recipe (or your own) for Roasted Chicken, or substitute your favorite grilled meat. Once you've piled on the basics, make it original with your own favorite add-ons: more cheese, roasted vegetables, etc. Ready-to-bake pizza crusts can be found usually in the bread or freezer aisle of your local supermarket or deli. Keep some on hand in your freezer for "emergency nights."

Ingredients

  • One 12-inch pizza crust, ready to bake
  • 1 Tablespoon olive oil (or spray)
  • 1/2 cup tomato sauce (store bought)
  • 1 cup shredded mozzarella, divided in half
  • 1 cup Roasted Chicken, cut into 1-inch pieces
  • 1/2 cup broccoli, florettes only, cut into 1-inch pieces (see Helpful Tips)
  • 1/2 cup red pepper, seeded and sliced lengthwise into 1/4-inch strips

Optional
  • 1/4 to 1/2 teaspoon oregano
 

Directions

step 1Preheat oven to 450 degrees F with baking rack in the middle of the oven.
step 2Lightly brush or spray olive oil on pizza crust.
step 3Spread tomato sauce on pizza crust up to 1 inch from the edge. Sprinkle 1/2 cup of shredded mozzarella over the sauce. Add the roasted chicken and vegetables over the cheese and top with the remaining 1/2 cup of mozzarella. Sprinkle on the oregano (optional).
step 4Bake the pizza directly on the rack until the crust is golden brown, the cheese is melted and the vegetables are cooked, about 7-10 minutes.

this receipe can by done on your outside grill. cook the pizza crust first (spray with oil etc) then place ingredients on top, cover grill and heat. Works great, without heating up the kitchen.
