Chocolate-Peanut Butter Fondue

Ingredients

  • 1 cup semisweet chocolate morsels (6 ounces)
  • 1/2 cup sugar
  • 1/2 cup milk (skim or whole)
  • 1/2 cup peanut butter (chunky or smooth)


Dipping items:
  • 1 apple, cored and sliced
  • 1 pear, cored and sliced
  • 1 banana
  • 1 orange, peeled and segmented
  • 1 pint fresh strawberries
  • 8 biscotti
  • Angel food cake or brioche, cut into cubes
 

Directions

step 1In a saucepan, combine the chocolate morsels, sugar and milk; cook over low heat, stirring constantly until the chocolate is melted. Add the peanut butter and mix well.
step 2Transfer the chocolate mixture to a 1-quart bowl that's been warmed. The chocolate will stay warm enough for dipping for about 20 minutes. If chocolate starts to solidify, reheat it in the microwave on half power, stirring after each 30-second increment until it is creamy again. If you have a fondue pot, transfer the mixture to the pot and set over a lit candle.
step 3Arrange the fruit, biscotti and cake on a plate with wooden skewers or fondue forks and serve with the fondue.

chef's notes

To warm a bowl for the dip, fill it with hot water until warm; then empty the bowl and dry it.

Chocolate can be chopped one day ahead and kept, covered with Saran™ Premium Wrap, at room temperature.

If leaving the chocolate fondue over the candle for any length of time (when using a fondue pot), stir it occasionally to avoid scorching.

To keep the fruit from browning, use lemon-lime soda (regular or diet) instead of lemon juice. The citric acid in the soda has the same effect as lemon juice, but without the lemony taste.
