Country-Style Turkey Sausage
Here's a delicious alternative to breakfast meat, and it won't clog your arteries!
When I'm cooking for a crowd, I always make an extra batch because these turkey sausage patties disappear from the platter fast. Some of my guests have even been known to drizzle them with maple syrup. Serve with our Sweet Potato Pancakes
or as a hearty companion to eggs. Or slip them inside a toasted pita smeared with Cranberry-Pineapple Chutney
, or filled with shredded lettuce, chopped onions, and sundried tomatoes.
step 1Heat the vegetable oil in a skillet over medium heat until hot. Add the onion and cook for 2 minutes.
step 2Add the garlic and sauté for 1 minute. Add the sage, thyme, oregano, and parsley and cook until the onions are translucent, about another 2 minutes. Let cool.
step 3In a large bowl, combine the cooled onion mixture, basil (if desired), salt, pepper, and turkey. Stir until completely combined.
step 4Shape the meat mixture into eighteen 2-inch round patties.
step 5Coat a skillet with nonstick cooking spray and heat over medium heat until hot. Cook the sausage patties in batches until nicely browned, about 3 minutes on each side.
step 6Drain on paper towels and keep warm in a 200-degree F oven until ready to serve.
