Happy Day Fortune Cookies

Fortune cookies like you've never tasted before! Created by Chef James Brockman, these easy-to-make wonders are so light and feathery, they will make you think of afternoon tea cookies.

And with a little creative thinking, you'll be able to create an endless array of fortunes that will make somebody's day. You could cheer someone up with an inspirational message ("Nobody does it better than you!"), express your love or ask somebody to marry you ("Want to set a date?") or even give subtle, unsolicited advice ("Do more research before you leap!").

Ingredients

  • 2 Tablespoons melted butter
  • 1/4 cup confectioners' sugar
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/4 cup all-purpose flour
  • 14 fortunes written on 3" x 1/2" paper
 

Directions

step 1Before you start baking, prepare your fortunes by consulting a book of inspirational quotes or create your own. Keep the fortunes short, about one sentence long. Use a pen (a calligraphy pen looks great) or your computer and printer to print the messages. One fortune per cookie is customary, but two might bring more excitement!
step 2Preheat oven to 375 degrees F.
step 3Combine all ingredients in a small mixing bowl. Whisk together with a wire whisk until very smooth.
step 4Oil the cookie sheets with nonstick cooking spray.
step 5Using a tablespoon, drop batter for three cookies on the cookie sheet, making sure they are 4 inches apart. With the metal spatula spread the dough evenly into 3-inch circles.
step 6Bake the cookies in the oven for 4 minutes until golden brown on edges. Wearing gloves, remove a cookie from the cookie sheet with the metal spatula, place a fortune in the center, fold the cookie in half over the fortune, and press edges together. Gently fold the cookie in half in the other direction and place the seam side down in a muffin tin to cool and hold its shape.
step 7Repeat process for the other two cookies remaining on the cookie sheet. (Note: bake only three cookies at a time because they cool fast, and you will need the time to mold them before they harden.)
step 8Repeat until all the cookies are done, using a cool cookie sheet each time. (A heated cookie sheet keeps the cookies from cooking evenly.)

This recipe couldn't come @ a better time. We're having a gazebo cook-out with an Asian flair as the theme. Fried rice is on the menu & home made fortune cookies are a perfect touch. The directions seem easy enough & something my "helpers" and I can do a few days before. I'm excited! I'll let you know how it goes.
