Hawaiian Tuna Burger

Pump up the flavor and cut the cholesterol with these healthy grilled tuna burgers topped with juicy pineapple slices.

Ingredients

  • 1-1/2 pounds fresh tuna steak
  • 2 cloves of garlic (finely chopped)
  • 2 inches fresh ginger (peeled and finely chopped)
  • 1 Tablespoon lite soy sauce
  • 3 scallions (thinly sliced)
  • 1 fresh pineapple (peeled, cored, and sliced into 1/2-inch round slices)
  • 1 teaspoon white pepper
  • 4 hamburger buns


  • Optional Fixings:
  • red onion, sliced
  • lettuce
  • tomatoes, sliced
 

Directions

step 1Cut the tuna into 1-inch cubes. Place cubes in the bowl of a food processor in batches and pulse until the consistency of ground beef. (If you do not have a food processor, chop the tuna into very small pieces.)
step 2Place the tuna in a bowl and add the cloves of garlic, ginger, soy sauce, scallions, salt, and white pepper.
step 3Using your fingers, combine all ingredients together.
step 4Shape the tuna mixture into 4 patties. Refrigerate in a Ziploc® Brand Storage Bag with the Smart Zip™ Seal or Ziploc® Brand Container with the Smart Snap™ Seal until ready to grill.
step 5Peel and slice the pineapple into 1/2-inch slices and grill on both sides for 2 minutes. Set aside.
step 6Grill the patties over a medium fire, 3 minutes per side for rare, or 6 minutes per side for well done.
step 7Choose your favorite hamburger buns and lightly grill, if desired. Place the grilled tuna patty on the bun and top with a slice of grilled pineapple. Add your favorite hamburger fixings.

Chef's Note:

Make sure you keep tuna (cooked or uncooked) refrigerated at 32 degrees F or colder (the average home refrigerator runs around 40 degrees F); if you don't, bacteria in the tuna can produce histamine, the same substance released by your body during an allergic reaction.

Why is it necessary to use tuna steak if we put it into a processor? I am VERY low on money. (Hence all the coupon hunting I do.) Do you think using canned tuna and straining it very well to get all the liquid out would work with similar results? PS. thanks for the hint to try with chicken!!

People eat tuna in the islands all the time and they have not been deterred by mercury scares at all.

I was surprised to see that the recipe was for tuna (seems like tuna is being advertised more and more and the fact that fish and other seafood has a high mercury content, I remember when I read that you should not eat it more than once a month. So I made the recipe and used chicken instead they were fantastic, so I tried it again using turkey and they were also great, next I will be incorporating it into my homemade veggie burgers. I really did like the chefs note about keeping cooked or uncooked tuna at 32 degrees.
