Homemade Applesauce

Depending on the apples you use, homemade applesauce may vary in the degree of sweetness (you can add sugar to taste), but it’s always delicious.

Ingredients

  • 6 medium apples (about 2 1/2 inches in diameter), Gala, Golden Delicious or McIntosh—peeled, cored and quartered
  • 1 medium lemon, zested and juiced
  • 1/4 teaspoon ground allspice
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
 

Directions

step 1Place the apples in a 3– to 5–quart saucepan or Dutch oven. Add the lemon zest, lemon juice, allspice and sugar. Cover the saucepan and cook over moderately low heat, stirring and mashing the apples frequently until they’re soft and cooked down, about 30 minutes.
step 2Spoon softened apples into a blender and puree until smooth. Spoon the puree into the saucepan and bring to a slow boil until the puree is quite thick, about 10 minutes. Stir in the vanilla, remove from stove and let stand a few minutes to cool. Pour in a large bowl and chill for at least 35 minutes.

I make applesauce all the time. I buy 10 lbs of apples, using all sweet apples. I peel, cut and toss in the pot. The only thing I add is cinnamon, and lots of it because we love it. I put it on low-med and keep the lid on, stirring occasionally. No sugar is needed at all! After cooking down, I break down the apple pieces to the degree we like. Then I vacuum seal packages and toss in the freezer. After you make it once, you'll NEVER go back to buying it off the grocer's shelves, that's a promise!
