Mini Chocolate Pizzas

Ingredients

  • 7 ounces bittersweet chocolate (not unsweetened), chopped
  • 5 ounces unsweetened chocolate, chopped
  • 1/2 cup butter
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 4 eggs (whole)


Spreads:
Peanut butter, marshmallow fluff, icing, chocolate hazelnut spread (about 1/2 cup of each)

Toppings:
Shredded coconut, chopped nuts, chocolate (white or other) minimorsels, small gum drops, sprinkles, candy-coated chocolate pieces (about 1/2 cup of each)
 

Directions

step 1In a 2-quart saucepan combine the chocolate and butter. Stir constantly over low heat until smooth. Remove from heat. Let cool.
step 2In a small bowl, stir together the flour, baking powder and 1/4 teaspoon of salt. Set aside.
step 3In a large mixing bowl, combine the granulated and brown sugar with the eggs. Beat with an electric mixer on medium to high speed for 2 to 3 minutes or until lightened in color. Beat in melted chocolate from step 1. Add the flour mixture from step 2 and beat until combined. Make sure not to over-beat.
step 4Cover the surface of the cookie dough with Saran™ Premium Wrap. Let it stand for 20 minutes to allow the dough to thicken.
step 5Preheat the oven to 350 degrees F. Line cookie sheets with parchment paper or aluminum foil. Drop 1/4 cup mounds of dough onto the cookie sheets 3 inches apart (4 cookies per baking sheet). Bake cookies for 13 minutes until the tops are set. Remove from the oven and let them sit 2 minutes on the cookie sheet. Carefully transfer the cookies to the cooling rack and cool.
step 6Once the cookies are cool, score the tops of the cookies into sixths with the flat edge of a knife. Arrange the spreads and toppings in bowls. Drop 1 Tablespoon of spread onto each cookie and spread out to 1/2 inch from the edge. Decorate with the toppings of your choice.

chef's notes

Transfer the cookies all at once to the cooling rack by carefully sliding the parchment paper or foil from the baking sheet to the rack.

Cooled cookies can be kept in an airtight container like Ziploc® Brand Twist 'n Loc® Containers for up to 1 week.
