Raspberry Chocolate Tart

Ingredients

Crust

  • 1-1/2 cups Oreo® Cookie Crumbs or chocolate wafer crumbs
  • 1/4 cup sugar
  • 4 Tablespoons melted butter
  • 10" tart pan with removable bottom or 9" pie plate

Filling

  • 16 oz. semisweet chocolate chips
  • 1 Tablespoon light corn syrup
  • 1 cup heavy cream
  • 2 pints fresh raspberries

Optional
  • whipped cream
 

Directions

step 1Preheat oven to 350° F.
step 2Mix the cookie crumbs, melted butter, and sugar together and press evenly into tart pan.
step 3Bake in oven at 350° F. for 20 minutes.
step 4Cool before filling.
step 5Place the chocolate chips and corn syrup into a heat-proof bowl.
step 6Heat the cream over low flame until very hot but not boiling.
step 7Pour the cream over the chocolate and let sit for four minutes. Then stir to melt chocolate. Keep stirring until the chocolate and cream are combined. (The final mixture should look shiny and smooth.)
step 8Spread one of the pints of raspberries across the bottom of the tart crust.
step 9Gently pour the chocolate over the raspberries, and smooth out the top, if necessary.
step 10Place in the refrigerator and let set for 2 hours.
step 11Decorate the top with the other pint of raspberries.
step 12If desired, top each slice with a dollop of whipped cream.

This recipe sounds amazing! For those with health issues (i.e., Type 2 Diabetes etc.) you really should not be eating desserts anyway so it's doubtful a "recipe breakdown" would be helpful for you anyway. Perhaps try a nice piece of fruit for dessert.

To the reader with health issues--I have yours issues plus a couple others. As I read the ingredients, I mentally thought of the substitutes: sugar (use less sugar + Splenda; milk chocolate chips (dark chocolate 65-75% cocoa) butter (your substitute) cream (low-fat) serving size (shrink); skip any type of whipped cream and sprinkle more berries on top. If you are not already using these and other substitutes, you are missing out on some of our favorite foods. I would consider this a 'special occasion' food.

OMG, this sounds totally divine! I just got home from the grocery store, but am willing to go back to town to get the ingredients. My hubs is going to be one happy camper...LOL!
