Roasted Red Grapes with Honey and Thyme 

Fresh grapes are delicious as is but roasting brings out even more of their sweetness.
Delicious as a simple appetizer paired with sliced cheese, roasted grapes also work well when served as a side dish with chicken or turkey or with angel food cake and whipped cream for dessert. They're quick and easy to prepare, yet elegant enough for company.

Ingredients

  • 1 pound red seedless grapes, rinsed and stems removed
  • 1 Tablespoon extra-virgin olive oil
  • 2 teaspoons fresh thyme leaves, stems removed (or 1 teaspoon dried)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground pepper
  • 1 Tablespoon honey
 

Directions

step 1Preheat oven to 400 degrees F.
step 2In a large bowl (or in a gallon size Ziploc® Brand Storage Bag), gently mix the grapes with the olive oil, fresh thyme leaves, salt and pepper.
step 3Arrange the grape mixture on a large baking sheet in a single layer. Don't overcrowd the grapes on the sheet.
step 4Bake the grapes at 400 degrees F, shaking the baking sheet occasionally until the skins begin to split, about 15 to 18 minutes.
step 5Remove the grapes from the oven and drizzle them with the honey. Serve the grapes immediately or let them stand at room temperature until you're ready to serve them.

chef's notes

For faster cleanup, mix the grapes with the other ingredients right on the baking sheet.

This is delicious! I'd bet it's uniquely delicious if combined with green grapes and served over vanilla bean ice cream. I do love green grapes with ajo blanco (a very garlicy white gazpacho soup!)

I have never tried this simple recipe. Sounds great and easy as we have grapes in the fridge all the time.
