Ingredients

  • 1 lb. asparagus
  • 1 Tablespoon vegetable or olive oil
  • 2 teaspoons salt
  • black pepper
  • 4 sprigs tarragon, chopped
  • 1 lemon
 

Directions

step 1Cut the woody base (approximately 1 inch) off the asparagus spears.
step 2Toss the asparagus in a bowl with the oil, salt, and pepper.
step 3Lay asparagus in a single layer on a cookie sheet and roast in a 350°F oven for 30-35 minutes.
step 4Squeeze lemon over asparagus, sprinkle with chopped tarragon, and serve.

Excellent and easy! However, I'll reduce roasting time to 15+ min. next time, as, even with pretty sturdy-sized asparagus, mine might have been more aptly titled "stewed" asparagus.
