Put leftover chicken to good use by making these easy sandwiches that are perfect for lunch or hearty enough for dinner. Pair them with oven-baked sweet potato fries, potato chips or a green salad for a quick and satisfying weeknight meal. Plus, the mixture freezes well for future meals, making it easy to plan ahead.

Ingredients

Salsa verde sauce

½ cup

olive oil

cloves garlic, chopped

1 cup

fresh parsley, chopped

Pulled chicken sandwiches

small yellow onion, thinly sliced

1 tsp

chili powder

½ cup

water

2 ½ cups

shredded chicken

1 ½ cups

jarred salsa

1 tsp

Salsa verde sauce

step 1
In a small saucepan, heat the oil over medium-low heat. Add the chopped garlic and cook until fragrant and just beginning to brown, about 3 minutes.

Turn off the heat and add the chopped parsley, stirring to combine.

Let the mixture cool slightly, then carefully transfer it to a blender, and puree until smooth. Store any leftover sauce in the fridge in a Ziploc® brand container.

Pulled chicken sandwiches

Heat the oil in a large nonstick skillet over medium heat. Add the onions, chili powder and ½ cup of water. Cook for 10 minutes, stirring frequently until the onions are softened and browned.

Lower the heat and add the shredded chicken, ⅓ cup of the salsa verde sauce, jarred salsa, salt and pepper. Cook until heated through, about 3 to 5 minutes.

Divide the mixture between the 4 buns and serve with your favorite side.


Chef’s Note

To freeze for later use, cool the pulled chicken and spoon into a Ziploc® brand bag. The chicken will keep for up to two weeks in the freezer.
