Take a break from plain old pork chops and spice up dinnertime with this make-in-10 minutes Thai-inspired dish with mango and green beans. Use a slow cooker and it’s ready when you walk in the door!

Ingredients

1 can

coconut milk (13 oz)

2 tbsp

curry powder

1 tsp

minced fresh ginger

½ tsp

salt

¼ tsp

ground black pepper

1½ lb

pork loin or pork tenderloin, cubed

2 cups

mango (fresh or frozen), cubed

1½ cups

green beans (fresh or frozen)


directions

To marinate

Step 1

In a large bowl, whisk to combine coconut milk, curry powder, ginger, salt, and pepper.

Step 2

Add pork, mango, and green beans; toss to coat.

Step 3

Pour into a Ziploc® brand bag, seal, and store in the freezer.

To cook

Step 1

Thaw and pour the contents of the Ziploc® brand bag into a slow cooker.

Step 2

Cook on high for 4 hours or low for 8 hours. Serve over rice and garnish with fresh basil, if desired.
