Tomato soup grows up in this recipe that blends smoky paprika, garlic and sweet carrots with a silky tomato base.

Ingredients

1 tbsp

extra virgin olive oil

1

yellow onion, peeled and diced

2

carrots, sliced

2

cloves garlic, peeled and diced

2

cans diced tomatoes

1 tbsp

smoked paprika

5 cups

low sodium chicken broth

¼ tsp

salt

¼ tsp

ground black pepper


directions

Step 1

In a large pot or Dutch oven, heat oil over medium heat. Saute onions, carrots, and garlic until onions are translucent, about 10 minutes.

Step 2

Add tomatoes, chicken broth, smoked paprika, salt, and pepper. Bring to a boil and reduce heat to a simmer. Simmer for 10 minutes.

Step 3

In two batches, so as to not to overfill the blender, blend the soup until smooth. Return to pot to warm and serve with breadsticks and/or shredded cheddar cheese.
